Dewey’s 2017 kick rocks

Our 2017 kick rocks was a single-vineyard blend of 52% cabernet franc and 48% merlot. Each variety was destemmed and left to cold soak until fermentation kick off spontaneously. Both lots were tread by foot, gently pressed once dry, and aged in neutral oak. The blend was assembled in March of 2018. With the exception of sulfur, kick rocks saw no additives. We bottled 100 cases unfined and unfiltered.

In 2017 we went direct-to-press for a long, gentle pressing. We settled the juice for a night and racked clean the next morning to two stainless steel and two neutral oak barrels for a native ferment. The wine saw no additives with the exception of sulfur. We bottled 100 cases, unfined and unfiltered.

Our 2018 kick rocks was 56% merlot (destemmed) and 44% cab franc (100% whole-cluster). Ferments kicked off spontaneously, and each lot received a combination of punch downs and pump overs. Gently pressed and aged in neutral oak. With the exception of sulfur, kick rocks saw no additives. We bottled 100 cases unfined and unfiltered.

In 2018, for some added phenolic complexity, we foot tread the fruit before pressing. We pressed to tank for a night of settling and racked clean to neutral oak the following morning. Fermentation was native, and a long and slow one at that. The wine completed malolactic fermentation and saw no additives other than sulfur. After fifteen months in barrel we bottled 180 cases, unfined and unfiltered.

The grapes were fermented native, 100% whole-cluster, and punched down twice a day with two bare feet. We pressed gently to a combination of neutral oak and stainless steel barrels. Other than sulfur the wine received no additives. We bottled 115 cases unfined and unfiltered.
